Korean BBQ Tempeh Burrito: A Tempting and Nutritious Plant-Based Wrap
Eating healthy doesn't mean giving up flavor. This Korean BBQ Tempeh Burrito is a tasty and nutritious meal. Let's make this tempting meal that's easy to make.
Ingredients:
For the Korean BBQ Tempeh:
1 package light life tempeh, crumbled
1 tbsp brown sugar
1 tsp minced ginger
1/2 tsp red pepper flakes
1 tsp minced garlic
1 tbsp soy sauce
1 tbsp olive oil
1 tbsp gochujang (hot sauce or ketchup works as an alternative)
2 tsp sesame oil
For the Burrito Wrap:
Large tortilla or burrito wraps
Steamed white rice
Shredded carrots
Assorted fresh herbs (green onions, basil, and cilantro)
Sauce of your choice (e.g., plant-based spicy mayo)
Steps:
1. Prepare the tempeh.
Heat a skillet over medium-low heat and add a drizzle of olive oil. Crumble the tempeh into small pieces and add it to the skillet.
2. Crisp the tempeh.
Stir-fry for about 5-7 minutes until the tempeh becomes golden and slightly crispy.
3. Season with Korean BBQ flavor.
Add the minced ginger, garlic, soy sauce, sesame oil, brown sugar, red pepper flakes, and gochujang. Stir well.
4. Simmer and absorb.
Let the mixture cook for 15-20 minutes, allowing the flavors to blend and the tempeh to absorb the sauce fully.
5. Prepare the fillings.
While the tempeh is cooking, prepare the steamed rice, shred the carrots, wash and chop the herbs, and get your wrap and sauce ready.
6. Assemble the burrito.
Lay the tortilla flat. In the center, layer a spoonful of rice, a portion of the BBQ tempeh, shredded carrots, herbs, and your choice of sauce.
7. Wrap it up.
Fold the left and right sides of the tortilla inward. Then, roll from the bottom up to form a tight burrito. Wrap in parchment paper if desired.
8. Serve and enjoy.
Slice the burrito in half and serve warm.
